02/15 - Schone Tal Winery Tasting @6pm - $20/person

SchöneTal Cellars is a family-owned pico-producing winery focused on crafting premium Pinot Noir with minimal intervention. Paying tribute to their German heritage, the name is derived from the "Schöne", meaning beautiful, and "Tal", meaning valley, which expresses their view of the Willamette Valley for its bio-diversity, agricultural richness, stunning landscapes and history.​

The winemaking style is simple but complex in structure. The foundation is sourcing quality fruit from vineyards that prescribe to sustainability, and sound viticultural practices. Followed by a diligently managed artisan vinfied process of producing small lots of unfiltered and unfined quality wines that showcase the natural elegance and sensuality of an Oregon Pinot Noir. We focus on harvesting the fruit at a time when the flavors have naturally developed in the vineyard, allow fermentation to occur spontaneously from indigenous yeast, manual punchdowns (no pumpovers), and neutral oak barrels for elevage.

We just got in the Weihenstephaner Hefe Weissbier and the M.I.A. Brewing Big in Japan. For those who are unfamiliar with Weihenstephaner, it is the oldest brewery in the world which goes back over a thousand years. The Bavarian state brewery was the monastery brewery of the Benedictine monks. Their basic brewing process has not changed. Time and time again, the brewery has won many international awards for its wheat beer. Enticing aromas of cloves and delicate banana rise through the fine bubbles, captivating the senses. Fruity nuances of banana and cloves intermingle with malt flavors to create a balanced beer with a light, creamy character. This premium, naturally cloudy, pale amber wheat beer is truly a feast for the senses.The M.I.A. Beer Company is a craft brewery and taproom located in Doral, Florida. They pride themselves on crafting new beers that incorporate exotic as well as locally sourced ingredients. Big in Japan is an American Lager/Japanese hybrid that is made with malt, rice, and sake yeast. Soft notes of rice, plum, pear, and tropical fruit with a dry and crisp finish. Such an exceptional taste!

Fukucho "Moon on the Water" Junmai Ginjo Sake (300mL) - $22/BTL

Fukucho is brewed in Hiroshima Prefecture in the Chugoku region. Their toji (brewmaster) is one of the few female brewmasters in Japan. She works diligently to create a geographical identity for this area within the world of sake. The Hiroshima prefecture has remarkably soft water that requires expert skill to use in sake production and once it is mastered, it enables a highly controlled, precise fermentation, resulting in vibrant fruit aromas. The flavors gravitate to ripe cantaloupe and anise while the minerality from the soft water is evident in the finish.

Tentaka "Hawk in the Heavens" Tokubetsu Junmai (300mL) - $18/BTL

Tentaka  is brewed in Tochigi Prefecture in the Kanto region. "Hawk in the Heavens" is an umami/rich style sake due to the heavy application of koji yeast and extended maturation period of 18 months. Dry and crisp, the flavors are dominated by mixed nuts, fresh cut green grass and other earthier flavors. Medium-bodied with a rich mouthfeel, followed by a lengthy and dry finish. This is a perfect sake for barbecue and it pairs well with lamb, beef with barbecue sauce, and mushroom dishes and it is a great representation of a traditional Junmai style that you would find in Izakayas throughout Japan.

Konteki "Pearls of Simplicity" Junmai Daiginjo Sake (300mL) - $22/BTL

Konteki is brewed in Kyoto Prefecture in the Kinki region. Aromas of white flower, Asian pear & steamed rice. Finishes elegantly with rich minerality and rice texture. This sake is more subtle and nuanced than most highly aromatic Junmai Daiginjos. It is based on the ideals of Zen Buddhism and "wabi-sabi," the belief that beauty within the arts should be as understated and pure as a simple strand of pearls. This is a great sipping sake but can be paired with scallops, oysters, and pork dishes.

2017 Weingut Laurenz V. Charming Gruner Veltliner, Kamptal, Austria

$30/BTL

The grapes for this very charming wine are grown in the Kamptal region of Austria. Here, the Grüner Veltliner ripens in granite, gneiss, mica slate as well as loess soils. Aromas of ripe apples and a typical Veltliner spiciness marry to create a fascinating fruit bouquet. On the palate, the wine is soft and juicy, supported by a fine fruit acidity. Very harmonious, allowing for perfectly smooth drinking.

2018 Bodegas Ordonez Triton Tinta de Toro Old Vines, Toro, Spain

VALUE WINE: $16/BTL!

100% Tinta de Toro (Tempranillo) from 5 vineyard sites starting from 65 to 120 year old vines. Sandy sedimentary soils with components of iron date all the way back to the Cretaceous period. They are the oldest soils in the Spanish Duero River valley. Triton Tinta de Toro is the pure representation of the oldest clone of Tempranillo in Spain, located in the only Spanish D.O. that completely resisted the phylloxera plague. This is certainly a wine that has such an incredible value and has great ripeness and power that can go head-to-head with some of the Napa big dogs.
