Summer Champagnes: Drappier Rose de Saignee, Plus New Events!

I find it interesting that Champagne is the only region in France that uses two methods for producing Rose Champagne where any other region uses only one method. There is the assemblage method and the saignee method. Assemblage method is 'to assemble' or blend the red wine into the clear wine in order to give it its color. The Saignee method is to saturate the grape skins and extract color which gives it a darker tone to the wine. By comparison, we have the Billecart Salmon Brut Rose which has it's classic salmon color to the left and the Drappier Rose de Saignee which displays a lovely coral magenta to the right.

Around 95% of producers in Champagne are using the assemblage method for their rosé Champagnes where they are taking some of the Pinot Noir out of the vineyards, crushing the grape, turning it into a light red wine and then assembling a percentage of the red wine into the base white blend. This base white blend could be Chardonnay, Pinot Meunier, Pinot Noir or a mix of all three. The Saignee technique is 100% Pinot Noir and it is much harder to do, especially when dealing with it on a larger production scale.The house of Drappier is considered the reference point for the southern part of Champagne. They have done more for Pinot Noir within Cote des Bar than any other producer. In fact, they had introduced the Pinot Noir varietal to the region, swapping it for the lesser varietal Gamay Noir. Since 1808, multiple generations have been working tirelessly in order to show just how great the region can be in regard to the production of superb Champagne. During the 1930s, Georges Collot or "Père Pinot (Father Pinot)" as he was known, was influencial in changing Gamay Noir to Pinot Noir within the vineyards. At that point in time, they laughed at him and now the most important variety in the south is Pinot Noir.Drappier likes to use gravity where most Champagne producers use centrifugal pumps. Their philosophy in doing this is there is less likeliness of bruising the fruit but also prevents oxidation.
