On the ancient plain of Oia, in the island of Santorini, you will find the winery of Domaine Sigalas. Here, one of Greece's most vibrant varietals can be found, the Assyrtico grape, as well as the Aidani, Athiri, Mandilaria and the Mavrotragano. Proper respect has gone to their organoleptic characteristics, and the quality of wines that are produced receive acclaim in international competitions, both in Greece and abroad. Assyrtico is arguably Greece's most iconic grape variety, where it is grown most famously on the volcanic island of Santorini. It is a versatile grape variety, and the wines are made in a wide variety of styles, from fresh, minerally white wines, to rich, nutty dessert wines known as Vinsanto. Assyrtico is often blended with Athiri, and due to Athiri's low acidity and low alcohol, it tends to tame some of Assyrtico's liveliness. The wine has a straw-blonde color with light shades of green. The nose is clean with subtle citrus fruit. Excellent structure, it is a full-bodied wine with a rich mineral characteristic, crisp acidity, with a long finish. Good concentration, well-balanced, and complex. Pairs perfectly with lobster, crab, and shellfish dishes.
