It contains only a small amount of residual sugar, and has an almost bone-dry finish. This is a harmonious blend of 70% “Grand Cru Pinot Noir”, and 30% Chardonnay.  We recommend that you enjoy this with oysters, fine seafood, hams and risotto.This stunning presentation includes (1) bottle of Vintage Extra Brut 2006, and a beautiful Billecart-Salmon carafe, inspired by the original bottle created in 1818.  It may seem unorthodox to decant a Champagne, but when dealing with more mature and complex Champagnes that have more power and substance, they need plenty of aeration to express itself. It's becoming more of a common practice in the Champagne region where a number of producers are now promoting it as a way to open up the wine and allow it to reveal its full depth.
